Have you set aspect ratio to 48:9 in video settings?

 

I don't try this opion in video settings

 

You could also try manually entering your resolution in the file "Documents\My Games\SimBin\RaceRoom Racing Experience\UserData\graphics_options.xml".

you have to enable surround in your nvidia control panel.
this makes windows believe you have a single screen with 5760px width and the 48:9 aspect option becomes available in RR
