Frist picture is my setup in practice mode, everything fine.

Then I go to an online lobby (second picture) without changing anything and everything is off center and on a random position.

Check if you have .uvm files for this car in there:
    ..\Documents\My Games\SimBin\RaceRoom Racing Experience\UserData\CarSetups

    and if so, try deleting

Edit: worked, but not anymore :(

I once or twice had it that my cockpit position randomly changed to outside of the car. During a training session. I drove normally, escaped to the pits and when I wanted to drive again I was staring at the pitwall at the opposite side of the pitlane from a 20 cm distance. Took me some time to even recognize that this WAS actually my cockpit view, but totally borked.

Resetting the cockpit position brought me back to the default position. From there I quickly dialed me in back to my ordinary position and I could drive again. Have you tried the reset function? Maybe this way you could revert the off-center position and you could adjust to your ordinary position from there again. Not perfect and a pita if it happens often, but a workaround nevertheless.

Yes first thing I tried was the reset position function. But the view is completely off center, it also resets off center.
also changing the view a few times didn't do anything.

Deleting the .uvm file from the porsche rsr as recommended by JF solved it for me at release, but now it's back again xD
