If I buy a single car and/or livery from a pack -- for example, if I buy the Chevy Cruze from WTCC '14 with just the default livery -- will the AI in single player still have access to the remaining vehicles and liveries in that pack? Or will I then be driving against a full field of Chevy Cruze's, all with the default livery? I'm sure this has been answered before, but a quick search didn't turn it up for me.

Nope. You'll see all cars when you race AI (or online). When buying cars and liveries you just unlock them for yourself to drive.
