I would be interested in my consistency throughout a race but in case of single player I have not found where I could have a look at my laptimes after the race. Also, during practice I am only able to see my last 8-10 laps. In multiplayer, I go back to the menu quickly after my finish and I can see my last 8-10 laps that is better that nothing.
If I remember correctly, you can see your Practice session lap times from the menu. (at least in Multiplayer) In the Standings (or similar) section when you click your name.
I'm not sure how it is for single player, but if you set a fast leader board lap it will save the replay for you.
