What are we comparing here? This is a production cars cockpit, with all sorts of stuff that you won't find in a racing car. Most modern racing cars cockpits look more like this:
It's more about the realisation. By the way why not allow people to create liveries. It would be great for the notoriety of the game and people would be happy.
Well, in respect to what they look like in real life, I would say the cockpits in R3E look pretty realistic to me, but that's of course only my subjective notion. And custom liveries...hm, great idea. I guess nobody thought about it until now.

Christian was being sarcastic about the custom liveries. It gets brought up often in a variety of threads and the devs have stated multiple times they'd like to do it but it is a big system to implement it both correctly and well.
If you think of the game design and business model, I think the issues will be connected to that. I presume it would be a lot of licencing work too.
Please, no modding, no custom liveries. I like sport's atmosphere in game. Leave it to professional artists.
But you also can't stop others from using them. After all you're not looking at your own car most of the time, you have to look at the cars/liveries others chose.
I think that you put the finger on it though i don't think it's a good choice. I always buy one car in each type. I doubt that liveries represent a valuable income for Sector3 compare to what could bring custom liveries for the game. The fact that Project Cars allows custom liveries and uses custom liveries made by WMD members and the fact that Assetto Corsa follows the same "chemin" talks for me.
